Orange muffins

Assalmo alaikum,

Looking through this book "1500 Best Bars,Cookies,Muffins,Cakes& More" which I borrowed from our locals library I saw this recipe of Orange muffin,I decided to use sweet and juicy naval orange I bought the other day.

When I was baking muffins,it filled my home with beautiful citrusy smell and it also tasted really good too.Im not bragging I'm sure when any of you will make this recipe outcome will be same inshallah (if Allah wills)

I will be trying some more recipes from this book and posting them here on my blog inshallah!!


2 oranges peeled and cut into 8 pieces each

1/2 cup freshly squeezed orange juice

1/2 cup dates or raisins ( I used 1/4 cup of chopped dates as I was scared that my kids might not eat )

1 egg (I used medium size)

1/2 margarine

1/4 wheat germ or natural bran ( I used oatmeal due to unavailability)

1 1/2 cup flour

1 tsp baking powder

1 tsp baking soda

3/4 cup granulated sugar

Salt 1 pinch


Preheat oven 400 F ,grease or line muffin tin( I used my cupcake tin)

In blender or food processor, combine oranges, orange juice , dates , eggs and margarine ,process until well blended.Scrape down edges of blender.Add oatmeal , process again.

In a bowl , sift together flour,baking powder, baking soda , sugar and salt.

Add orange mixture to flour mixture and mix well

Spoon batter into prepared muffin tin.sprinkle some oatmeal on top of batter.Bake in preheated oven for about 15 minutes

Serve warm and enjoy

Semi homemade tandoori chicken kabobs

Assalamo alaikum,

The recipe I'm sharing with you guys is one of kids favorite ,they call these "orange kabobs" due to their tandoori orange color.This recipe is very simple either you can deep dry these or cook them shallow fry,i made these shallow fried less oil much better!!!

So here is the recipeI used Shan tandoori masala but in small quantity to give them tandoori taste and orange color.


1 pd Ground boneless chicken ( I used boneless thigh meat as it give more juicier kabobs)

2 tbsp Shan tandoori masala (available at most Indian or Pakistani stores)

1/2 tsp cumin seed ground

1/2 tsp red chilli fLakes (optional)

I small pouch instant mash potatoes

1/2 bunch finally chopped corriander

2 tsp lemon juice

2 bread slices crumbs(you can either use food processor or crumble them with your hands )


Mix together all the ingredients.let it rest for 15 min in the fridge,so it's easier to handle

Use the back of wooden spoon or skewers to make Long kabobs that are hollow in the middle .Now heat a regular or a grill pan and brush it with 1 tbsp oil (non stick pan will use less so if possible use that)

Cook on both side on medium heat, then lower the heat and cook it covered so the kabob get cooked from inside for about 10 minutes or until tender.

Serve hot with coriander chutney , sliced onions and naan.

Quick oatmeal muffins


Mornings are very chaotic in our home ,if lunch and breakfast is not already planned .Today was a day when there was no plan for breakfast specially for my kids,I wanted to make something quick and healthy

So I looked up for a muffin recipe ,yes in the morning !! I found one on ,so I decided to give it a try and Alhamdulilah (all praise belongs to Allah) it came out good.

I'm sharing this recipe with you!!


2 eggs

2/3 cup brown sugar

1/2 cup vegetable oil

1/2 cup milk

1 cup all-purpose flour

3/4 cup instant oatmeal (i used quick oats)

1 teaspoon baking powder

1/2 teaspoon baking soda

1 pinch salt

Quick directions:(yes!!!)

Heat oven at 400 degree F (200 degree C),grease 12 muffin cups (i don't have muffin tin so I used my cupcake and line it.Mix all the dry ingredients(except brown sugar) ,mix all liquid ingredients with brown sugar and add dry ingredients to it.Mix thoroughly and fill your liners 3/4 full and bake for 20

Serve warm and enjoy !!!!

Happy New Year !!!!!


You guys must be thinking I'm crazy "happy new year" already!!!,yes it is .Today is the first day of Muharram and the first month of Islamic calendar.So Happy New Year !!! And today is another special occasion That is National Bundt cake day,so to celebrate, I'm obviously making a bundt cake my favorite!!I usually use my good old bundt cake recipe making bundt cake but today I said why not something new?

So I searched and searched and searched (actually not that much)finally found a recipe of a double chocolate bundt cake on good housekeeping website and decided to use it.

So here it is :



  • 2 1/4 cup(s) all-purpose flour
  • 1 1/2 teaspoon(s) baking soda
  • 1/2 teaspoon(s) baking powder
  • 1/2 teaspoon(s) salt
  • 3/4 cup(s) unsweetened cocoa
  • 1 teaspoon(s) instant espresso-coffee powder
  • 3/4 cup(s) hot water
  • 2 tsp vanilla
    2 cup(s) sugar
  • 1/3 cup(s) vegetable oil
  • 2 large egg whites(i used three whole medium eggs it worked fine)
  • 1 large egg

  • 1 ounce(s) (1 square) unsweetened chocolate,, melted
  • 1/2 cup buttermilk
  • Mocha glaze( I used chocolate glaze)

  1. Preheat oven to 350 degrees. This recipe is for 12 cup bundt pan but I think mine is 10 cups one ,so I had some left over batter.
  2. On sheet of waxed paper, stir together flour, baking soda, baking powder, and salt.
  3. In 2-cup measuring cup, mix cocoa, espresso-coffee powder, and hot water until blended; set aside.
  4. In large bowl, with mixer at low speed, beat sugar, oil, egg whites, and whole egg until blended. Increase speed to high; beat until creamy, about 2 minutes. Reduce speed to low; beat in cocoa mixture, chocolate, and vanilla. Add flour mixture alternately with buttermilk, beginning and ending with flour mixture.

  5. Beat just until combined, scraping bowl occasionally with rubber spatula.

  6. Pour batter into prepared plan.

  7. Bake 45 minutes, or until toothpick inserted in center of cake comes out clean. Cool in pan on wire rack 10 minutes.
  8. With small knife,loosen cake from side of pan; invert onto wire rack. Cool completely.
  9. Meanwhile, prepare Chocolate glaze . Place cake on cake plate; pour glaze over top of cooled cake, letting it run down sides. Allow glaze to set before serving.dust with powdered sugar .
  10. Enjoy!!!
  11. Chocolate glaze :
  12. 1 cup heavy cream
  13. 6 oz semi sweet chocolate chip
In a microwaveable bowl heat cream and chocolate chip until both are melted and mix together thoroughly ,make sure you check it every 1 minute so you won't burn it,try your glaze if needed add some powdered sugar.

Oreo Ice cream pie

Assalamo alaikum,

To celebrate the festivities of Eid ul adha ,we invited my husband friends and their families over for lunch on the second day of Eid ,everything was cooked at home with the help of my ammi(mother),and yes of course my hubby !!!

With so many things to make I totally forgot take pictures ,but as I made my dessert ahead of time so I took pictures and would love to share with my readers inshallah,so here we go


One and half pack of Oreo cookies (I totally forgot to count)

2 tbsp of butter

One 8oz tub of cool whip

Instant pudding mix powder(vanilla flavor)

31/2 cups 2% milk

Caramel sauce


Crush one pack of cookies into fine crumble with butter in a food processor


Spread it evenly in the flat bottom dish and then spread caramel over it and let it set in the freezer for at 30 minutes

Now mix your instant pudding mix in the cold milk , mix it completely and let it cool

Coarsly crush the remaining cookies

Mix lightly whip cream , coarsly crushed cookies(leaving behind some for garnishing) in the cold vanilla pudding ,

Now take your cold crust evenly pudding mixture on top of that

Garnish with remaining cookie crumble and caramel sauce,

Cover it and freeze it for at least 4 hrs or until ready to serve

Eid al Adha Mubarak!!!!

Eid Mubarak to all the readers, Eid- al-Adha, the Festival of Sacrifice,it falls on the 10th day of the Islamic calendar’s last month, Dhul-Hijjah.

The festival commemorates Prophet Ibraheem's willingness to follow Allah's command to sacrifice his son Ishmael and Ishmael's consent to being sacrificed. Today, it is is marked by slaughtering animals to feed the poor. Coming at the end of the Hajj, a journey of dedication and purification, Eid al-Adha is understood as an opportunity for second chances.

Prophet Ibrahim,began having inconceivable dreams in which Allah instructed him to sacrifice Prophet Ismael Unbelievable as the dreams were, Abraham decided to follow Allah's instructions -- but not before asking Prophet Ismael if he would agree to this. The son did not hesitate, showing ultimate submission to Allah's will by telling his father to go through with the sacrifice. Then, at the very moment that Prophet Ibraheem raised the knife, Allah tells him to stop -- they had passed the test -- and to replace Prophet Ismael with a lamb.In a symbolic act, Muslims who can afford slaughter a cow,sheep,goat or camel,keeping a portion to feed themselves and distributing the rest to friends, family and the needy .Eid al-Adha falls within the annual pilgrimage to Mecca known as the Hajj

Meethi roti (sweet flat bread)

This is the favorite of my youngest one,whenever he sees me making roti's he surely ask in his cute little voice"can I have some meethi roti "

I think all the kids in desi(Indian or Pakistani) families must fan of this roti!! I also enjoyed these when I was young:))

Lets make some meethi roti

Ok you will need

Soft dough made with whole wheat flour

Ghee,butter or oil



Make a ball a little bigger then golf ball

Roll it out about six inches

Spread a little ghee, oil or butter on your rolled bread

Then sprinkle sugar evenly on it

Now cover half way through from top and bottom

And then on the sides making a square

Press it down and roll out a square roti

Cook it on a heated griddle using oil to fry it la little

Serve warm to your little kiddos and I hope they surely will enjoy!!!

Chana Daal (yellow chickpea lentil) poori

Assalamo alaikum,

These amazing and delicious poori were introduced to me by my dear ammi (mother),she make really good one , I tried copying her recipe and to my delight they came out really good.

I'm sharing this recipe and so you can also enjoy these delicious poori's

I made a lot of these poori ,you can always half the recipe for your desired amount!!


3 cups Chana daal

6 cups durum Atta (whole wheat flour)

1 onion sliced and crisp golden browned

Zeera (cumin seeds) 2 tsps

Crushed red chilli pepper flakes 3 tsp

Ground black pepper 1/2 tsp

Ghee or butter 1/2 cup

Water to make the dough

Salt to taste

Vegetable oil for deep frying


Boil channa daal until tender,and grind into fine paste.

Add spices,salt and brown onion ,mix well.

Add flour to this daal mixture and then add ghee mix well to make a soft dough ,use water if needed.

This dough in the picture needs a little more kneading)

Let your dough rest for fifteen minutes

Heat oil in a deep wok,now at this point you can decide if your health conscious , to shallow fry or cook your poori on a heated griddle using little or no oil ,it will definitely not as tasty as fried version but it will be guilt free!!!

Ok then make golf ball size ball out of your dough and roll it out about 1/4 inches thick poori and deep fry on both side until golden brown on edges and middle,
Drain and serve with nothing !!yes this one is good on its own, but you can definitely serve it with sunny side up eggs on a delightful Sunday mornings and enjoys!!

Oatmeal cookies


Finally I'm baking something,I have been wanting to bake oatmeal cookies long time .These cookies are amazing as they are yummy and healthy also ,my kids are not oatmeal fans (breakfast kind)so i can get some oatmeal in their tummies by making these cookies,they love these cookies .


Here is the recipe

Ingredients:Oatmeal Cookies:

3/4 cup unsalted butter, room temperature

1 cup packed light brown sugar

1 large egg

1 teaspoon pure vanilla extract

3/4 cup all purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

3 cups old-fashioned rolled oats

Oatmeal Cookies: Preheat oven to 350 degrees F,In the bowl of your electric mixer (or with a hand mixer), beat the butter and sugar until creamy and smooth (about 2 - 3 minutes).

Add the egg and vanilla extract and beat to combine.

In a separate bowl, whisk together the flour, baking soda, salt,. Add the flour mixture to the creamed mixture and beat until incorporated. Stir in the oats.

For large cookies, use 1/4 cup of batter (I like to use an ice cream scoop) and space the cookies about 2 inches (5 cm) apart on the baking sheet.

Then wet your hand and flatten the cookies slightly with your fingers so they are about 1/2 inch (1.25 cm) thick.Bake the cookies for about 12 - 15 minutes or until light golden brown around the edges but still soft and a little wet in the centers. Remove from oven and let the cookies cool a few minutes on the baking sheet before transferring them to a wire rack to cool.

Makes about 20 - 24 large cookies
