Sooji Halwa(semolina dessert)

Assalamo alaikum

In my last post I shared with you poori (puffed flat bread) recipe, today to go with those puffed up goodness I'm sharing the recipe for Sooji halwa, actually Sooji halwa is made in different styles in Pakistan ,back where I was born and brought up.This particular halwa is famous with poori ,sold all over Karachi for breakfast ,it's sweet ,smooth and melts in your mouth,it's that good!!!

Here is my way !!

1/2 cup Sooji (a little goes along way)

1 cup sugar (increase or decrease sugar to adjust for sweetness)

1/4 cup butter

2 tsp oil

1/8 tsp orange food color

2-3 cardamom pods
2-3 cloves
1/4 inch cinammon
Chopped almond and pistachios (optional)

Heat a flat bottom sauté pan on medium low heat add butter and oil ,then add your whole spices cook a little until butter is melted and you can smell the spice a little ,now add Sooji cook it until fragrant and little change in color.keep stirring

Add sugar cook it by stirring it constantly you don't want to burn it ,

now add water enough to cover the Sooji and sugar mixture ,add food coloring and cook on high until bubbly ,

then lower you heat and cook it cover until all liquid is absorbed and you see a glossy shine on the halwa,it will still a little watery as it is suppose to be like that

garnish with nut (optional ) ,I don't do that as my kids don't like it that way .

Serve it warm or cold (both ways it delicious) with hot poori and Enjoy!!!!
