Happy New Year !!!!!


You guys must be thinking I'm crazy "happy new year" already!!!,yes it is .Today is the first day of Muharram and the first month of Islamic calendar.So Happy New Year !!! And today is another special occasion That is National Bundt cake day,so to celebrate, I'm obviously making a bundt cake my favorite!!I usually use my good old bundt cake recipe making bundt cake but today I said why not something new?

So I searched and searched and searched (actually not that much)finally found a recipe of a double chocolate bundt cake on good housekeeping website and decided to use it.

So here it is :



  • 2 1/4 cup(s) all-purpose flour
  • 1 1/2 teaspoon(s) baking soda
  • 1/2 teaspoon(s) baking powder
  • 1/2 teaspoon(s) salt
  • 3/4 cup(s) unsweetened cocoa
  • 1 teaspoon(s) instant espresso-coffee powder
  • 3/4 cup(s) hot water
  • 2 tsp vanilla
    2 cup(s) sugar
  • 1/3 cup(s) vegetable oil
  • 2 large egg whites(i used three whole medium eggs it worked fine)
  • 1 large egg

  • 1 ounce(s) (1 square) unsweetened chocolate,, melted
  • 1/2 cup buttermilk
  • Mocha glaze( I used chocolate glaze)

  1. Preheat oven to 350 degrees. This recipe is for 12 cup bundt pan but I think mine is 10 cups one ,so I had some left over batter.
  2. On sheet of waxed paper, stir together flour, baking soda, baking powder, and salt.
  3. In 2-cup measuring cup, mix cocoa, espresso-coffee powder, and hot water until blended; set aside.
  4. In large bowl, with mixer at low speed, beat sugar, oil, egg whites, and whole egg until blended. Increase speed to high; beat until creamy, about 2 minutes. Reduce speed to low; beat in cocoa mixture, chocolate, and vanilla. Add flour mixture alternately with buttermilk, beginning and ending with flour mixture.

  5. Beat just until combined, scraping bowl occasionally with rubber spatula.

  6. Pour batter into prepared plan.

  7. Bake 45 minutes, or until toothpick inserted in center of cake comes out clean. Cool in pan on wire rack 10 minutes.
  8. With small knife,loosen cake from side of pan; invert onto wire rack. Cool completely.
  9. Meanwhile, prepare Chocolate glaze . Place cake on cake plate; pour glaze over top of cooled cake, letting it run down sides. Allow glaze to set before serving.dust with powdered sugar .

  12. 1 cup heavy cream
  13. 6 oz semi sweet chocolate chip
In a microwaveable bowl heat cream and chocolate chip until both are melted and mix together thoroughly ,make sure you check it every 1 minute so you won't burn it,try your glaze if needed add some powdered sugar.
