Cinnamon sweet bread(Daring Bakers Challenge Februrary 2014)

Assalamo alaikum,
When i saw this months daring baker challenge i was really excited cause last time when i participated in daring bakers challenge it didnt really came out as i was thinking ,but this time it is bread i love playing with dough:) Before any other details let me tell you about daring bakers by "the daring kitchen ",we are a challenged with amazing recipes by great bloggers and its revealed on our blogs on 27th of the month .hey stop by my blog on 27th of next month i might be trying out another daring baker challenge!!!
Beauty surrounded the Daring Bakers this month as our host, Sawsan, of chef in disguise, challenged us to make beautiful, filled breads. Who knew breads could look as great as they taste? i couldn't thank Sawsan enough, before this challenge i never thought bread can be a part an artistic creation and it was so much fun, thanks!!Please do visit her blog she is very experienced and has really amazing recipes worth the visit!!!
This was something new to me so i followed the recipe as is( with very small variations ),but i would soon try artistic beautiful breads with some other recipes also,so come back soon you all.My readers would enjoy looking at it but make sure you give it a try also as it may seem a little intimidating but for sure you will enjoy making it also inshAllah!!!

Cinnamon Sweet Bread
Recipe:
1/4 cup warm water
3/4 cup warm milk
1 large egg
1/4 cup butter, softened
1/4 cup white sugar
1/2 teaspoon salt
3-1/4 cups flour,

2 teaspoons dry yeast

For topping:
1/4 cup of milk
Filling:
1/4 stick butter
4 tablespoons cinnamon
1/2 cup sugar

For brushing:

some melted butter for extra shine

For drizzling:
1/2 can sweetened condensed milk
Directions:
mix together,butter,yeast,egg ,water and milk
Combine flour and salt
combine dry and liquid ingredients to make a soft dough.
place it in lighlty oil bowl and cover it wet kitchen towel and let it rest in warm place
let it rise double the size of its original size
now on lightly floured surface form it into a disc
divide the disc into four equal parts

roll all four of them into 10 inch circles
now with a brush spread butter on all four of the layers

And sprinkle sugar and cinnamon powder on three of them

place the layers on top of each other and place the layer with only butter on the top
now make cuts to divide the circle into eight triangles


make cut that go 2/3 of the middle of triangle making sure that it does not go to either top or bottom of triangle

now take the tip of triangle and take it out from underside through the slit in the middle

place all the triangles in the baking tray

pinch the two angles at the base of triangle

brush the dough with milk
and let it rest for 15 mins
heat oven at highest temperature of your oven mine was 550 F
after 15 mins place your tray in the oven oven for 5 mins and then lower down the temperature at 390 F and
bake the bread for 15 - 20 mins until golden brown on top and cooked from inside
if you its not getting cooked inside cover it with foil and lower the temperature and if it not getting brown on top turn on the broiler for little while to achieve the golden color.


let the bread cool on wire rack for 5 mins and brush it with some
drizzle with sweetend condensed milk while bread is still warm.
serve warm and enjoy!!!

Naan bread ( flat bread)

 

 

Assalamo alaikum ,

Flat bread or Naan are very famous in Pakistan and India alike,I won't go in the details of where is origins from as I'm only interested in the fact that this bread is amazingly soft and chewy yummy specially the one made in Tandoor (hot clay oven) but unfortunately living aboard clay oven ones are not readily available either you buy them at Indian andPakistani restaurants or stores I always keep some in my freezer to complement niharis,paya and Tikkas etc etc but sometimes I worry about the amount of preservatives and unnatural stuff used in store bought things so I make my home versions .today I'm sharing my recipe of Naan with you guys but to make thing a little on healthier side(a little) I'm using 100% whole wheat flour with all purpose flour ,my Naans came out really good ,I hope you guys will try it out and enjoy it also as much as my family did insh Allah!!!

My recipe is in large quantity as we are big family and I also freeze my leftover dough in a ziplock bag or a plastic which can be easily used when thawed at room temperature but if you are interested in making less dough you can always half the recipe !!

Naan recipe

Ingredients:

All purpose flour 6 cups

100% whole wheat flour 3 cups

Salt 2 1/2 tsp or as needed

Sugar 4 tsp

Eggs 2

Yogurt 1 cup

Milk 1 cup

Active Yeast 6 tsp

Baking powder 2 tsp

Melted butter

Finely Chopped cilantro 1/2 bunch

Directions:

Mix both flour together

Mix together all the dry ingredients in big wide mouthed bowl

Now make a well in the center add yogurt,milk and eggs

 

Mix yogurt, milk and egg until combined

Now slowly slowly mix dry and wet ingredients and also water to make a soft dough

 

 

 

Cover dough lightly with oil on all sides

 

Now cover bowl with transparent wrap and put in a warm place for atleast 2-3 hrs until dough doubles in size

 

 

Punch the dough down

Heat oven to 550 degree F and place a non stick cookie sheet or a sheet covered with aluminum foil in hot oven let the sheet heat up

Now take a little bit small size ball then tennis ball ,roll is out 1/8 inch thick bread and prick it with fork

 

Roll out 3 or 4 Naans as per space of the cookie sheet

 

Now very carefully take out cookie sheet and put your rolled out Naans on it and put it back in the oven ,it will take around 4-5 minute for your naan to cook

 

When you see brown specs on the top of the Naan take it out and brush melted butter on hot Naans and sprinkle chopped cilantro .

 

Serve hot and enjoy!!

Kaala Chana (black gram)

Assalamo alaikum,

Alhamdulilah I'm blessed to be living in Southern California beautiful weather most of the time,don't want to make my friends living in the other side of the country where it's snow constantly every place has its pros can cons who doesn't love beautiful white snow but living there by the way I have lived in east coast four years I loved snow but with my little darling kids ,it was hard moving out and about .Still I wish and pray for everybody's safety anywhere in the world where ever they live(Ameen)

 

I went out of hand talking about weather and stuff actually I wanted to praise California weather 'cause we were able to enjoy an outing near a beautiful lake last week ,it was not really planned ahead just a night before we decided that.I had already planned a Kaala chana and pakora breakfast for that morning but I thought why not take the stuff to our picnic and enjoy it there and Alhamdulilah it was a good idea we enjoyed a lot !!!

My reason for all this small talk is I wanted to share my Kaala chana recipe with you guys which is not actually mine but my mothers,Kaala chana is a big staple for us during ramadan not a single day of fasting can go by without this very health and filling food filled with protien so good for fasting but we also love to enjoy it any other day of the year.It goes amazing with pakora and Kachi daal( I explain the recipe for this at the end of this recipe) .i have already shared my daal pakora recipe with you guy.

Kaala chana

 

Ingredients:

Kaala chana 2 cups

Onion sliced 2 med

Oil 2 tbsp

Black pepper ground 1/2 tsp

Red chilli powder 1/2 tsp

Salt to taste

Water enough to cover your Kaala Chana's

 

Directions:

Soak the Chanas at least for 3-4 hrs in warm water,they should double up in size

In a pot or pressure cooker add soaked chana,oil ,onions ,black pepper powder, red chilli powder and salt

 

Now I cooked my chana in pressure cooker but you can also cook it in a pot .for pressure cooker let it cook for twenty minute and please please let the cooker release all the steam then open it ,it could be very very dangerous ok!!.and in a pot cook the chana uncovered on high flame until boiling and then cook it cover on medium heat until chana it tender when press between your fingers, for pot it will take around an hr and a half to get that tenderness.

Now when your chana is tender and still have some water left cook on high heat until water dries and you have a thick gravy ,don't dry out all the water as chana would be too dry .check for salt add more to taste if needed and enjoy simply with Kachi daal .let me tell you Kachi daal recipe goes great with black chana

 

Kachi daal:

Ingredient :

Chana daal or yellow split pea 1/2 cup soaked in warm water for at least 2 hrs

Ginger thinly sliced 1/2 inch piece

Lemon juice 3 tbsp

Green chillies 2 sliced

Salt to taste

Drain soaked chana daal and add rest of the ingredients mix well ,serve with Kaala chana and daal pakora and enjoy!!
