Fried fish fritters

Assalamo alaikum,

As I have told you guys in my earlier blog posts ,my family is a big fan of seafood and whenever I make some of those I never have trouble with my kids eating it masAllah.so I love to incorporate seafood in my weekly menu as much as possible and it's healthy too.i won't say the dish I'm sharing with you in this post is super healthy but with some benefits it's super delicious I'm using swai fish but tilapia or flounder would work fine too insh Allah ,I usually serve it with daal (lentil soup),plain rice and fried or baked potatoes .i hope you enjoy trying this recipe out and please let me know how it came out.

 

 

Recipe

Ingredients:

Swai fish fillets 3lb bag thawed in cold water and drain completely

Besan or gram flour 1 cup

Cornstarch 1/2 cup

Garlic crushed 1 tsp

Turmeric powder 1/2 tsp

Zeera or cumin seeds crushed 1 tsp

Red chilli flakes 1/2 tsp or to taste

Salt to taste

Cilantro or coriander 1/2 bunch roughly chopped

Oil for deep frying

 

Directions:

Cut drained fish into 1 to 2 inch pieces ,this is optional you can keep the size of fish as it's pleases you I only did smaller pieces kids can handle it easily and less gets waisted

Now apply garlic , turmeric ,salt and chilli flakes to fish

 

Then add gram flour and cornstarch adding little by little ,mix well

Now add chopped cilantro

 

Let it rest for little while so it can absorb the marinate

Deep fry on medium high heat until golden brown and flesh is no more pink.

Serve with plain rice and daal ,or with spicy cilantro chutney and enjoy !!!

Chicken Chow mein

 

 

Assalamo alaikum,

 

Chinese food is one of the favorite meal in my household when it's time to go out for dinner most of the time Chinese is on top of our list.i also love cooking Chinese at home specially when you want to give your taste buds some change of flavors .chow mein being one of a favourite dish for my kids I often make it and it doesn't take much time too if you plan ahead a bit .today I'm sharing my simple chow mein recipe which I learned from a Chinese cookbook ,just added some spice to adjust to my desi taste lol but very simple yet delicious recipe!!!

 

 

Chicken chow mein

Ingredients:

Chow mein Noodles 1 6 oz packet

Boneless chicken leg cut in small cubes or thin strips 2lbs

Garlic cloves 4-5 finally chopped

Oil 3-4 tbsp

Coleslaw mix 1 cup ( this makes life easy)

Yellow onion 1/2 medium sliced

Chopped green onions or scallions1/2 cup

Sliced green bell pepper 1/2 cup ( I had red so i used that)

Sugar 2 tsp

Soy sauce 3 tbsp

Whole dried red chilies 2-3

Salt to taste

Chilli garlic sauce 2 tbsp ( use less or more as per your taste)

egg white 1

Corn starch 2 tsp

Direction:

Marinate chicken pieces in 1 tbsp of soy sauce,1 tbsp of chilli garlic paste, egg white ,cornstarch and 2 tsp oil leave it in refrigerator for about an hr or so

Mix together in a bowl 1 tbsp soy sauce, sugar and 1 tbsp oil and set aside

Boil noodles as per package direction

Drain and run cold water over it ,as sometimes noodles get sticky ( learned by bad experience)

Now after draining toss the noodles with soy sauce and oil mixture

Take out marinated chicken and bring to a room temperature

Now in a wok heat 2 tbsp of oil add whole red chili fry a bit and add chopped garlic until fragrant, then add chicken pieces fry on high heat until chicken becomes brown.take it out

Now add 1 tbsp of oil to the wok ,heat and fry sliced onion until transparent ,then rest of the vegetables fry on high heat until little bit cooked but not lumpy, mix in your noodles and chicken until all ingredient are distributed properly

Add chillie garlic paste and soy sauce if needed,

Garnish with chopped green onions before serving

Raita and Persian cucumber salad(daring cooks challenge March) 2014

Assalamo alaikum,

I'm really excited today as I'm sharing my first daring cooks challenge with my readers I have been daring cooks member since some time but not been able to do any challenges,for my readers who don't know about daring cooks challenge it's a website with lots of amazing members ,on every 17th of a month we are challenged by our assigned member for that month to make a special dish which we reveal on 14 th of coming month it's lots of fun ,for more info check daring kitchen website!!!

For March’s Daring Cooks’ Challenge, Ruth, Shelley and Sawsan asked us to totally veg out! We made salads and dressings, letting the sky be the limit as we created new flavors and combinations that reflect our own unique tastes.

I decided to share my traditional Pakistani plus my family favourite salad and yogurt cilantro dressing with you guys which can be enjoyed with any meal but goes great with Tandoori chicken ,kababs and biryani escpacially .we serve this salad and dressing side by side so dressing can be used as needed which serves as a dip for kababs and tandoori chicken as well,hope you all will enjoy it in sha Allah !!

Raita (spicy yogurt cilantro dressing )

Ingredients :

Yogurt 3/4 cup

Green chilli 1 chopped

Zeera (cumin seed) 1/2 tsp

Cilantro or fresh coriander 1/2 bunch chopped

Garlic clove 2-3

Splash of lemon juice

Salt to taste

 

Direction:

 

In a blender blend together to all the ingredients to form a thick paste

Add salt to taste

Add more yogurt or water for desired consistency

Serve over a salad or on side as a dip!!!

 

Persian cucumber salad

Ingredients:

Persian cucumber 3 chopped

Tomato chopped

Red onion 1/2 chopped ( I didn't have red one so I used yellow one)

Lettuce shredded 1 cup

Salt to taste (optional)

 

Direction:

Mix tomato, cucumber, onion and lettuce

Sprinkle salt

Mix again ,

Serve as is or with a raita or any other dressing and enjoy!!!

Chocolate chip granola bars

Assalamo alaikum,
I have mashAllah four kids,whom I love dearly so on and off I try to make snack for them at home with so many preservative in store bought snacks I try that whenever possible make something for them at home.
Granola bars are favourite snack for my kids they love it (me too lol!!),so It was on my baking list for so long I always thought lots of effort needed to make some of those but when I started looking up on the internet they seem very easy ,then I decided to give it a try .i thought first time I should go for something simple then later I can experiment with other ingredients in sha Allah !!! It's a super easy recipe I made it 6:00 am in the morning before my kids go to school and I was able to send those for snack that day!! So make sure you give it a try simple ingredient and very easy recipe.

Chocolate chip granola bars
Ingredients:
Quick oat 3 cups

1/4 cup brown sugar
6 tbsp butter
1/4 cup honey
1/2 cup chocolate chips or mini chocolate chips

Directions:
Grease a rectangular pan I used a cookie sheets covered aluminum foil and brush with butter
In a big bowl take out your oats
Now in a medium sauce pan melt together butter,honey and brown sugar ,
Simmer to mix together and bubbly on side

Add the liquid mixture to the oats and mix thoroughly with a wooden spoon

It's time to add chocolate chips some might melt ,
Now press the mixture in the cookie sheet with help of a parchment paper to make a rectangular shape
Make sure you press it down firmly cause if it's loose your bar will come out loose and crumble
Bake in a 350F oven for about 20 mins until edges are brown and top is light brown
Take it out let it cool completely and put it in the fridge for 10-15 mins also for better results
Take it out off the cookie sheet and cut into bars or squares ,send them for snacks!!!
Your kids will enjoy them and you will too in sha Allah!!!

Fish Curry

Asslamo alaikum,

Cooking fish has always been a big task for me,as I think I won't be able to cook as good as my Ammi (mother),her fish curry is good oh yum yum ,so one day when she was visiting us I thought right time to ask her to cook some fish for me lol!!! But instead of cooking fish for us she told me I won't catch fish for you I'll just teach you fishing means she is going to teach how to cook and then I can enjoy that fish curry whenever I want to (hope so) .I was a little hesitant cause I might mess her recipe too but guys tell you the truth wasn't that hard ad thought so there are some tips and tricks to follow along and wallah you have created some good tasting fish ,there are lots of recipe for cooking fish out there but I'm sure when you try this one you will coming back to it inshAllah!!!

FISH CURRY

Ingredients :

Fish fillet or with bone 2 lbs (I used boneless Tilapia fillets)

Onion 2 medium coarsley chopped

Tomato 2 medium chopped

Yogurt 1/2 cup

Tamarind paste 1/4 cup

Oil 3 tbsps (canola oil)

Ginger 1 inch piece chopped

Garlic whole cloves 8-10 piece

Fenugreek seed 5-6

Turmeric powder 1 tsp (for washing the fish with)+ 1/2 tsp

Red chilli powder 1 tsp

Salt to taste

1/2 cup water

Chopped fresh cilantro or coriander 1/2 bunch

Chopped green chillies optional

 

Direction:

Defrost fish in cold water if using frozen

Rub 1 tsp turmeric on fish ,it will take out the smell

wash out the turmeric and put it in a strainer to remove excess water

In a blender add onion,tomato,garlic,ginger ,yogurt and tamarind paste to make a thick purée

In a wok or karahi heat oil and add fenugreek seeds until fragrant and dark brown

Now slowly add onion and tomato purée to it cook for three four minutes

Now add the spice salt,red chili powder and turmeric powder cook until all the water is evaporated and oil is separating from gravy for around 10 -15 mins on medium high heat stirring frequently making sure gravy does not burn from the bottom

 

Now add water ,bring it boil and then simmer it cover for 10 mins

Now your gravy is ready check for salt and then add fish pieces on a high heat for two three minute until bubbly but now don't use any kind a of spoons to stir the fish

Now lower heat mix everything around by moving the wok gently by holding the sides

Sprinkle with chopped cilantro and green chilies (if using),leave some cilantro to garnish before serving

 

Cook it covered on low flame until fish is tender and oil has separated from gravy.

Garnish with cilantro and serve very carefully with flat spatula to make sure no broken pieces inshAllah!!

And enjoy with white rice or chapattis!!
