The Daring Bakers’ May, 2014 Challenge: PÃO DE QUEIJO

Assalamo alaikum,

Ever since I became part of the daring kitchen I have seen so many amazing recipe from all around the globe ,we get to make and taste delicious foods from all over world with the ingredients usually we use in our daily life but cooking them in different way ,which makes it really exciting every month!!!

This month's Daring Bakers' Challenge took us on a trip to beautiful Brazil! Renata of "Testado, Provado & Aprovado!" taught us how to make Pao De Queijo, tasty cheese buns that make the perfect snack or treat, and that will make your taste buds samba!

I have followed the recipe as is from here:



4 cupstapioca starch

1 cup (250 ml) whole milk

2-3/4 tablespoons butter

1 teaspoon salt (or to taste depending on how salty your cheese is)

3 cups cheddar cheesecoarsely grated

1 to 3 large eggs



Heat milk, butter, and salt in a small sauce pan until it comes to a boil. Watch closely as it may boil over. Remove from heat and set aside.

Sift tapioca starch into a large bowl.

Pour the boiled (hot) mixture over the tapioca and start stirring with a fork. The milk mixture will not be enough to form a dough yet. You will have a lumpy mixture, that's what it is supposed to be.

Keep stirring with the fork,break the lump as much as you can,until the mixture cools down to warm

At this point turn on the oven at 400F


Now add grated cheese( I think I should have used a little less cheese as my bread came out a little too gooey) and mix it into topaica mixture

Now add eggs one at a time mix it by hand until the dough forms (I used 2 eggs) it's ok if it's is little sticky but should pliable dough

Now make balls a little bigger then golf ball use little vegetable oil to grease your hand so it's easy to make and place them onto a greased or parchment paper lined baking try I used greased foiled tray worked well for me(I had a pretty little helper with me too)

Bake for 25 mins or until the balls have risen and have browned from the bottom if baked too long it will become and bitter.

Enjoy them hot or warm with coffee as Brazilians do!!

Maftoul (daring cooks challenge May 2014)

Life gives you lot of challenges sometimes they turn out to be really amazing and sometimes you learn important lessons from it but running away from challenges is something one should never do as how do know what will be the result there is no harm trying right!!My daring cook challenge in May seemed like one big challenge nothing like the one we face in our lives lol!!

The May Daring Cooks' Challenge was hosted by the incomparable Sawsan from chef in disguise. Sawsan challenged us to try our hands (literally!) at making maftoul - hand-rolled Palestinian couscous that is as versatile as it is tasty!

When I started to work on it I was really excited but when I saw my result it made me little anxious but I'm sure if I give maftoul making little bit more practice in sha Allah results will be different.My first experience is not very ideal but I'm sure there is something I'm doing wrong the video ,directions and pictures from the daring kitchen given by Sawsan were very easy but I'm sure If any of you would give it a try result might be different !!!

But I still made some maftoul from scratch using the recipe given by Sawsan and made a dessert out of it using some of my Pakistani ingredient rose water, cardamom and powdered coconut to give it a new taste ,the texture was uneven not pearl like but taste was very good reminded me of maleeda my mom use to make for us from crumbled cooked flat bread .

I was not able to form them in ball or round just crumbled up!!
Passed them through big hole sieve ,I got some even pieces

After cooking they were little sticky

Still made my dessert and enjoyed the taste

Pan Grilled Fish

Assalamo Alaikum,

Today I was just thinking how close Ramadan is now, first thing in my mind came was food what to prepare before head so it's easier but then I scolded myself as Ramadan is not about food it's about the feeling the pain of hungry and deprived people around us and praying to Allah (swt) so we could earn as many blessing as we could because sawab or blessing are much more even for a small deed may be before I use to put more emphasis on food but now I'm planning to make some goals for myself and kids in sha Allah so we are much better Muslims and keep our creator happy in sha Allah!!

As The Prophet (Sallallahu Alaihi Wasallam) said: “Whoever draws near to Allah during it (Ramadan) with a single characteristic from the characteristics of (voluntary) goodness, he is like whoever performs an obligatory act in other times. And whoever performs an obligatory act during it, he is like whoever performed seventy obligatory acts in other times.” (Sahih Ibn Khuzaymah, no. 1887)

Please share any thing regarding preparing for Ramadan and observing during Ramadan would be really valuable in sha Allah!!

Now I should get back to my recipe post which is not related to Ramadan but may be can be used on one of light Iftari days that is "Pan Grilled Swai fish ",I buy this in the frozen section of my grocery store already cut into fillets ,I used to be a big fan of Tilapia but when I tried this fish I liked it as comes out great fried,in a curry or even pan grilled it has milder taste and creamy texture.This recipe is simple and will work great for a light dinners in sha Allah !!! I hope you all will give it a try and enjoy it!!



Swai fish fillets 5-6

Garlic paste 2 tsp

Soya sauce 3-4tbsp

Cilantro chopped 1/4 bunch

Crushed red chilli flakes 1/2 tsp or to taste

Black pepper ground

Oil for brushing the grill pan



Marinate defrosted and drained fish in garlic paste,soya sauce ,chilli flakes and chopped cilantro( save some chilli flakes and cilantro while grilling) for atleast 30 mins

Heat a grill pan on high and brush it with some oil to coat the pan

Now carefully place marinated fish in the pan leaving some space in between each fillet sprinkle some freshly ground black pepper ,chilli flakes and cilantro on it

Grill on medium high until both side ,6-8 minutes on each side so that this fish is opaque in the middle

Take it out in a big serving dish and serve hot !!

I served it with a side of green beans ,mash potatoes and coleslaw

Simple Bundgobi Mix Subzi (cabbage stir fry)

Assalamo alaikum,

There are days in life when you want to keep things simple and easy we are living in a time when everybody is very busy to some extent that it becomes a problem that you are too busy to give time to your family specially your parents when you are married and have kids ,but as Allah says in quran:

"... And that you be dutiful to your parents. If one of them or both of them attain old age in your life, say not to them a word of disrespect, nor shout at them but address them in terms of honor. And lower unto them the wing of submission and humility through mercy, and say: "My Lord! Bestow on them Your Mercy as they did bring me up when I was small." (17:23, 24)

So we have to be very careful to make sure we are taking proper care of your parents in sha Allah!!!

Cooking is something I enjoy a lot but sometimes it's take great effort and amount of time to put together a good dish,but to make things easy I have delicious yet simple vegetarian recipe for you guys,which I have made several times and every times it comes out good and one more thing about it is that it's light too goes great with chapatis(thin whole wheat flat breads).

So here it goes I hope you will enjoy as much as I do!!


Ingredients :

Oil 2 tbsp

Curry leaves 3-4

Zeera (Cumin seeds)1/2 tsp

Ajwain (carom seeds)1/8 tsp

Onion 1 small sliced

Coleslaw mix 2 cups

Green onion sliced 1/2 cup

Green chilli 1 sliced

Mushroom sliced 1/2 cup

Salt to taste

Ground black pepper 1/8 tsp or to taste




Heat oil in a wok or karahi

Add curry leaves cook until fragrant

Now add cumin ,carom seeds cook for about a minute



Add sliced onion and cook until translucent not brown


Now add coleslaw mix, green onion (reserve some for garnishing),sliced green chillies and sliced mushrooms


Cook on high heat for a minute or two ,then add salt

Now bring it to simmer and may add a splash of water

And cook it covered for 10 minute until tender.

Cook on high heat for a minute or two if too watery

Garnish it with some sliced green onions.

Serve with chapati and enjoy
