Egyptian lentil soup Mena cooking club October 2014





Assalamo Alaikum,
today we will be traveling  to egypt (kind of) to have some delicious lentil soup ,being part of
 Mena cooking club we get to try lots delicious dishes from various middle eastern countries it is so much fun !! this month's country was Egypt and our host is Amira from Arabian Mama ,as always we were given choice of three dishes in which we could either make one or all it was our choice.
i have been making desserts from last challenges this time i decided to do soup i.e lentil soup which was quite familiar to the daals(lentils) we make regularly with some variations.i was really excited to try Egyptian version which seemed really good.and after tasting it is really good!! yummy :)
So dear reader here is the delicious recipe of lentil soup but i would highly recommend  to visit other delicious post from the members of Mena cooking club, enjoy!!!

Egyptian Lentil Soup

Recipe
2 cup yellow lentils ( i had red ones so thats what i used)
 4-5 cloves of garlic
1 medium onion chopped
1 medium carrot chopped
1/2 green. red or yellow bell pepper chopped
dash of cumin powder
salt to taste
water

Directions:




in a pot combine all the ingredients


fill the pot with water to cover the lentils

cook over high heat to bring to boil

then simmer on low until lentils are tender for 30 mins

cool the mixture and blend it in a blender

now return to pot ,add broth or water to achieve desired consistency

serve with warm bread and enjoy!!
