Garlic vegetable pulao

Assalamo Alaikum,

Alhamdulilah(all praise to Allah) we are in the month of February ,yes January already passed ,I am sure like me everybody must  have made lots of resolution in the beginning of the year,i made a lots for me such as to get closer to Allah(god), spend less,eat healthy,get more punctual on my blog and etc etc some of the resolution are still in process i mean that i am not hoping to  change in myself in a wink so I am taking it slow as they say"slow and steady wins the race" i hope and pray that i become successful in my goals in sha Allah (if Allah wills) and i also hope for best for all you out there to achieve success in your goals!!

Today i am sharing a rice recipe with lots of colorful vegetables and its very easy to make here in US  as you can already buy chopped up vegetable in freezer section but you can always chop these vegetable up yourself.
Its kind of healthier recipe,  even though i am avoiding rice to lose some weight (my another goal)but with so many vegetables going in your system its still kind of good right (wink wink)
this will go great with any kind of curry. I totally forgot to take picture when i served this rice but surely took some pictures when i was enjoying it the next day with sunny side up egg or fried egg and enjoyed it lot better this way!!

I made this recipe in a big quantity as mashAllah we are big family and leftovers are always a blessing but you can easily cut it in half as per your requirements.


3 cups washed and soaked rice (soak in water for alteast 45 mins)

1 pound bag of frozen mix vegetables

1 medium size onion thinly sliced

1/4 tsp black pepper corn

1/4 tsp cloves

2 green cardamom

1 large black cardamom

1 tsp cumin seeds

2 bay leaves

1/4 inch piece of cinnamon stick

2 tsp garlic powder or to taste

2 tbsp butter

water 4 cups

2 tsp oil


Fry thinly sliced onions in oil until soft

then add cloves,cardamoms,cinnamon,black pepper and bay leaves saute until fragrant

now add frozen mix vegetable (no need to thaw) and cumin seeds fry for 2 to 3 mins

now add water and 2 tbsp butter and garlic salt check the water if its salty garlic salt is enough and if its not add little bit more garlic salt

now add rice and saute for couple of mins

cook  covered on medium high heat until water is absorbed

and rice comes on top

now cook it covered  on low heat  until rice is tender,fuff it up with a fork so all the rice are seperate
serve hot with curry or raita or this raita under my biryani recipe or may be a fried egg next day at lunch time and enjoy!!!
