The Daring Cooks’ February, 2015 Challenge: Middle Eastern Breakfast



Assalamo alaikum,

this month has been kind of "Middle Eastern" for me earlier on February 10 I went to "Kuwait" cooking adventure with Mena cooking club, here and now again for February daring cooks challenge,Manal from Manal's Bites invited us to celebrate the most important meal of the day Middle Eastern style!
Manal gave us lots of examples of dishes served on a middle eastern table MashAllah there are lots of varieties in which you can see the use of yogurt , garbanzo beans are  a lot which shows how healthy and fulling it is.we had to make three of items listed .making choice was hard ,i really love Hummus and love the versatility of this dip you can use it as spread,as dip its really good !!so i decided to make it .Then choice number two was Pita bread as i wanted something to eat with my hummus and then Egyptian Foul  sounded really good ,i sadly couldn't find Fava beans in my local ,can you believe it i was shocked too i didn't  go to my favorite middle eastern store as i was out of time (yeah i made it today and bought the stuff today luckily had tahini from before)so long story short i bought butter beans but in sha Allah next time i'm at that store i will buy me some fava beans to make the real deal!! i really liked the taste of all my dishes had lots of fun,i hope you all will enjoy making it too:)



"MIDDLE EASTERN BREAKFAST"




PITA BREAD

ingredients:

6 cups flour
1/2 tsp salt
4 tsp  instant yeast
2 tbsp sugar
4 tbsp olive oil
2 1/2 cups luke warm water


direction:

Mix all the ingredients completely and knead the dough for 10 minutes


let it rise for an hour



divide dough into 12 equal parts

make a ball and let it rise for 30 mins



roll the balls into 1/4 inch flat bread

bake into 500F heated oven for 3 minute  on heated stone or cooking tray





serve warm or cold and enjoy!!



"EGYPTIAN FOUL"

Ingredients:

2  15oz can Fava beans cooked ( i used butter beans )
1 medium tomato chopped
2 green onion finely chopped
1/3 cup tahini paste
1 lemon juice
salt to taste
2 clove of garlic minced
1/2 cup cilantro chopped
extra virgin olive oil to drizzle

Direction:

In a small sauce pan cook foul with cnning liquid on high heat until comes to boil

simmer for few minutes until some water evaporate

mash bit with potato masher leaving some whole

take of heat and add chopped tomatoes

in a separate bowl combine tahini,lemon juice, salt ,garlic and enough water to get the consistency of a cream

add tahini mixture to the foul then add 3/4 of the green onions and cilantro



pour mixture in a serving dish and garnish with remaining green onions and cilantro



HUMMUS

ingredients:

14oz cooked chickpeas or Garbanzo beans
3tbsp tahini paste
juice of one lemon
salt to taste
2 cloves of garlic
2tbsp yogurt
 water


Direction:

Mix all the ingredients in a food processor except water

add water as needed to get a smooth texture

taste to adjust salt

sprinkle paprika and drizzle olive oil

serve with fresh pita bread
